Cucumber Yogurt Salad:

Ingredients

  • 1 large cucumber diced
  • 2 cloves of garlic minced
  • 750 grams of Greek yogurt
  • 1/4 cup of finely chopped cabbage
  • 1 teaspoon of dried mint
  • Fresh mint leaves finely chopped (add a few leaves for taste)
  • Salt

Instructions

  • Start by preparing the cucumber. Wash it thoroughly, peel it if desired, and then dice it into small pieces.
  • Mince the garlic cloves finely.
  • In a mixing bowl, combine the diced cucumber, minced garlic, finely chopped mint and finely chopped cabbage.
  • Add the Greek yogurt to the mixture and stir well to combine all the ingredients.
  • Sprinkle the dried mint over the salad and season with salt to taste. Mix well
  • Garnish the salad with fresh mint leaves for added freshness.
  • Refrigerate the salad for a little while before serving if you’d like it to be chilled, or you can enjoy it immediately.
