Cauliflower Stir-Fry with Tomato and Coriander

Ingredients
- 1 medium cauliflower cut into small pieces
- 3 medium onions chopped
- 1 bulb of garlic smashed
- 1 tablespoon homemade red pepper paste
- 1 tablespoon ground coriander
- Handful of chopped fresh cilantro
- 2-3 tablespoons strained tomato
- 1 cup chicken broth
- Extra virgin olive oil
- Salt Lemon juice to taste
Instructions
- Place the cauliflower pieces in a frying tray and drizzle with extra virgin olive oil. Mix well.
- Air fry the cauliflower for approximately 14 minutes.
- In a separate frying pan, heat some olive oil and add the smashed garlic. Sauté briefly.
- Add the chopped onions to the pan and continue to sauté until they soften.
- Stir in the red pepper paste, ground coriander, and chopped cilantro, for about 2 minutes
- Add the air-fried cauliflower to the pan and mix thoroughly, for 2-3 minutes.
- Pour in the strained tomato and stir well to combine.
- Add the chicken broth and allow the mixture to boil for about 8-10 minutes until the cauliflower slightly softens.
- Season with salt and lemon juice to taste.
