Cauliflower Stir-Fry with Tomato and Coriander

Ingredients

  • 1 medium cauliflower cut into small pieces
  • 3 medium onions chopped
  • 1 bulb of garlic smashed
  • 1 tablespoon homemade red pepper paste
  • 1 tablespoon ground coriander
  • Handful of chopped fresh cilantro
  • 2-3 tablespoons strained tomato
  • 1 cup chicken broth
  • Extra virgin olive oil
  • Salt Lemon juice to taste

Instructions

  • Place the cauliflower pieces in a frying tray and drizzle with extra virgin olive oil. Mix well.
  • Air fry the cauliflower for approximately 14 minutes.
  • In a separate frying pan, heat some olive oil and add the smashed garlic. Sauté briefly.
  • Add the chopped onions to the pan and continue to sauté until they soften.
  • Stir in the red pepper paste, ground coriander, and chopped cilantro, for about 2 minutes
  • Add the air-fried cauliflower to the pan and mix thoroughly, for 2-3 minutes.
  • Pour in the strained tomato and stir well to combine.
  • Add the chicken broth and allow the mixture to boil for about 8-10 minutes until the cauliflower slightly softens.
  • Season with salt and lemon juice to taste.

Notes

Serve hot and enjoy with rice. Don’t forget to drizzle some the cauliflower extra sauce over your plate 😋
