Mediterranean Summer Salad:

This is my Mediterranean Summer Salad. It’s perfect for cooling down on a hot day. It’s simple to prepare, tastes great, and is good for you. You can bring it to picnics and BBQs or have it with your favorite dishes.

Ingredients

  • 2 medium tomatoes diced
  • 1 medium green bell pepper diced
  • 1 medium red bell pepper diced
  • 1 medium yellow bell pepper diced
  • 3 small cucumbers diced

  • 1 rib of celery finely chopped
  • 1 teaspoon sumac a tangy spice
  • 3 cloves garlic minced
  • Fresh parsley and mint finely chopped (as much as you like)
  • Juice of 2 lemons
  • 1 teaspoon fresh Zest finely chopped
  • Salt

  • Make the Dressing Magic: In another bowl, mix up the olive oil, minced garlic, sumac, zest, and the juice of two lemons.
  • Mix: Pour that magic dressing over the diced veggies in your big bowl. Now, give it a gentle toss – we want every veggie to party together with the dressing. Sprinkle some salt. This is your chance to make it just right for your taste buds.
  • Add Some Crunch: Toss in the finely chopped celery for a satisfying crunch. It’s like a little surprise in every bite.
