Mediterranean Summer Salad:
This is my Mediterranean Summer Salad. It’s perfect for cooling down on a hot day. It’s simple to prepare, tastes great, and is good for you. You can bring it to picnics and BBQs or have it with your favorite dishes.
Servings: 4 People
- 2 medium tomatoes diced
- 1 medium green bell pepper diced
- 1 medium red bell pepper diced
- 1 medium yellow bell pepper diced
- 3 small cucumbers diced
- 3 tablespoons olive oil
- 1 rib of celery finely chopped
- 1 teaspoon sumac a tangy spice
- 3 cloves garlic minced
- Fresh parsley and mint finely chopped (as much as you like)
- Juice of 2 lemons
- 1 teaspoon fresh Zest finely chopped
- Get Ready : In a big bowl, throw in those colorful tomatoes, peppers (green, red, and yellow), and cute little cucumbers.
- Make the Dressing Magic: In another bowl, mix up the olive oil, minced garlic, sumac, zest, and the juice of two lemons.
