Growing up, my mom’s kitchen was my culinary classroom, and it’s where I first learned about this salad. Adding my twist to the recipe, I introduced cabbage to give this delicious taste.

Arugula is one of my favorite green veggies. Packed with fiber, calcium, and many vitamins, it has become a staple in many of my salad creations. Here we go!

Ingredients

  • 1 bunch of arugula
  • 1/4 small cabbage thinly sliced
  • 1 small tomato diced
  • 2 garlic cloves minced
  • Small bunch of green onions chopped.
  • 1 teaspoon of sumac
  • 1 teaspoon of red pepper paste a homemade paste
  • Olive oil
  • Salt to taste
  • 1-2 lemon juice adjust to your preference

Instructions

  • Wash the arugula thoroughly and let it drain, then chop it. Thinly slice the washed cabbage. Dice the small tomato. Mince the garlic cloves. Chop the green onions.
  • In a large mixing bowl, combine the chopped arugula, sliced cabbage, diced tomato, and chopped green onions.
  • In a small bowl, combine the olive oil, lemon juice, the red pepper paste and minced garlic and sumac. Mix the texture very well.
  • Add the mixture over the salad and gently toss it to ensure all ingredients are well combined and coated with the dressing.
  • If desired, you can garnish the salad with additional sumac or a few extra green onions.
