Cauliflower Stir-Fry with Tomato and Coriander

Ingredients

medium cauliflower
cut into small pieces
3
medium onions
chopped

bulb of garlic
smashed

tablespoon
homemade red pepper paste

tablespoon
ground coriander
Handful of chopped fresh cilantro

strained tomato

cup
chicken broth
Extra virgin olive oil
Salt
Lemon juice to taste
Instructions
Place the cauliflower pieces in a frying tray and drizzle with extra virgin olive oil. Mix well.
Air fry the cauliflower for approximately 14 minutes.
In a separate frying pan, heat some olive oil and add the smashed garlic. Sauté briefly.
Add the chopped onions to the pan and continue to sauté until they soften.
Stir in the red pepper paste, ground coriander, and chopped cilantro, for about 2 minutes
Add the air-fried cauliflower to the pan and mix thoroughly, for 2-3 minutes.
Pour in the strained tomato and stir well to combine.
Add the chicken broth and allow the mixture to boil for about 8-10 minutes until the cauliflower slightly softens.
Season with salt and lemon juice to taste.

Serve hot and enjoy with rice. Don't forget to drizzle some the cauliflower extra sauce over your plate 😋
