Ingredients

  • 2 Avocados
  • 3 boiled Eggs
  • 1/2 handful of green mint, chopped
  • 1/2 handful of green onions chopped
  • Handful of parsley chopped
  • 2 tbsp extra virgin olive oil
  • Salt

Instructions

  • In a bowl, combine all the above ingredients.
  • Toast the whole grain bread.
  • Crush the eggs and avocado together and mix them with the chopped vegetables
  • Drizzle olive oil and sprinkle salt, mix well
  • Spread the mixed ingredients over the bread.
  • Top with olives and a sprinkle of pumpkin seeds.
