Arugula is one of my favorite green veggies. Packed with fiber, calcium, and many vitamins, it has become a staple in many of my salad creations.

Servings: 4 People
- 1 bunch of arugula
- 1/4 small cabbage thinly sliced
- 1 small tomato diced
- 2 garlic cloves minced
- Small bunch of green onions chopped.
- 1 teaspoon of sumac
- 1 teaspoon of red pepper paste a homemade paste
- Olive oil
- Salt to taste
- 1-2 lemon juice adjust to your preference
Wash the arugula thoroughly and let it drain, then chop it. Thinly slice the washed cabbage. Dice the small tomato. Mince the garlic cloves. Chop the green onions.
In a large mixing bowl, combine the chopped arugula, sliced cabbage, diced tomato, and chopped green onions.
In a small bowl, combine the olive oil, lemon juice, the red pepper paste and minced garlic and sumac. Mix the texture very well.
Add the mixture over the salad and gently toss it to ensure all ingredients are well combined and coated with the dressing.
If desired, you can garnish the salad with additional sumac or a few extra green onions.
Serve the Mediterranean Arugula and Cabbage Salad with Lemon and Red Pepper Paste as a flavorful and refreshing side dish.
